Ingredients:
35mL Pineapple Lemongrass syrup
35mL Tequila
Soda water
1/4 cup sliced Pineapple (canned from the cupboard is fine)
1/8 Chilli sliced (try chilli flakes if you don’t have fresh)
Mint leaves
Method:
Put pineapple, mint and chilli (save some back for garnish) in your glass and muddle – with a rolling pin works well. Add ice, then pour over syrup and tequila, and top up with soda water. Stir and garnish with mint and chilli
