Six Side Rickey

This is our re-interpretation of a South Side Rickey, made in collaboration with St Andrews Limes...

Ingredients

• 60ml dry gin
• 30ml lime juice
• 30ml Six Barrel Soda Lime Syrup
• 50ml St Andrews Limes Limonade
• Fresh mint and lime slice for garnish 

Method

1. Select and pre-chill a tall (or Collins) glass.
2. Prepare the garnish of lime slice and mint sprigs.
3. SHAKE the gin, lime juice and lime syrup with ice.
4. STRAIN into an ice-filled glass.
5. TOP UP with Limonade.
6. Garnish with lime wedge and mint sprigs.
